The main "Quest Giver" of my campaign is none other than Princess Leia Organa of Alderaan herself. She assigns the party with the missions of the modules and the party reports to her.
Why have a nameless officer give the party their missions when you can use the coolest, most awesome characters available? Leia is an important leader of the Rebellion and committed to the fight. She commands multiple rebel squadrons and of them is the PC's.
Also, Luke Skywalker trains one the Jedi aspirant PCs in the force, and another PC will soon start his training.
Chewbacca has sold some grenades to the party.
Other famous characters, such as Han Solo, have made small cameos.
Players love this kind of stuff.

I like General Dodonna the most, but really it’s any and all of the above. Dodonna was just featured in the new Marvel SW comics. Marvel has been on a tear lately; their main Star Wars line has been fantastic. The line started as the WEG game did, right after the destruction of the Death Star, and we've been following the star warriors ever since, past issue 50 now. I'm reading Volume 10 from the collections, and its great. Volume 7 involved the poor, cracked, wounded planet of Jedha and the aftermath of Rouge One. That was cool. Volume 8 showed us how Leia spearheaded the action to gain the Mon Cal cruisers for the Alliance. Volume 9 was as awesome as The Empire Strikes Back, showing Vader's response to the Rebel's new fleet. Volume 10, which just came out, is the aftermath of Vader's destruction. He's a bad-ass. All of these show Leia in her best light, too. She's a true leader. A princess. You could take Volumes 8-9 and use it as a basis for a hell of a game, Strike Force Shantipole style.
