As of this date, 10-3-2019, these are the official adult Star Wars novels and anthologies.
A LIST OF THE NEW CANON NOVELS
This is a list of the novels included in the new canon. I list only adult novels here, but I understand that there are many Young Adult novels that people enjoy.
Master and Apprentice by Claudia Gray = A story of Qui-Gon Jinn and Obi-Wan Kenobi, set prior to The Phantom Meanace.
Dooku: Jedi Lost by Cavan Scott = The story of Dooku's fall to the Dark Side. Or, should I say, rise from the Dark Side.
Dark Disciple by Christie Golden = Set during the Clone Wars, this is a novel featuring the Jedi Quinlan Vos partnering up with Nightsister Asajj Ventress in an attempt to execute Count Dooku. This novel was adapted from an 8 episode arc of the Clone Wars animated TV series.
A New Dawn by John Jackson Miller = This is a prequel to the animated Rebels TV series. It introduces the characters of Kanan Jarrus and Hera Syndulla. The setting is 8 years after Revenge of the Sith. The book also introduces Captain Rae Sloan, who becomes Admiral Sloan in the Aftermath trilogy below.
Solo: A Star Wars Story by Mur Lafferty = The novelization of the Han Solo origin movie.
Thrawn, Alliances, Treason by Timothy Zahn = A trilogy of novels that brings the popular character from the Legends Extended Universe back into canon. Thrawn appears in the Rebels TV series as well.
Lords of the Sith by Paul S. Kemp = A story featuring Darth Vader and the Emperor set between Revenge of the Sith and Tarkin.
Tarkin by James Luceno = This book chronicles the rise of Grand Moff Tarkin. It is set between Revenge of the Sith and A New Hope.
Catalyst: A Rogue One Novel by James Luceno = This is a prequel to Rogue One.
Rogue One: A Star Wars Story by Alexander Freed = An exceptional novelization of the film.
Battlefront II: Inferno Squad by Christie Golden = Second war focused novel in the Battlefront series and tie-in to the video game. This one features Inferno Squad and is set right after Rogue One.
Heir to the Jedi by Kevin Hearne = This book chronicles the adventures of Luke Skywalker between A New Hope and The Empire Strikes Back. The new Marvel Star Wars comics, main series, are set just after this novel.
Battlefront: Twilight Company by Alexander Freed = This is a proper war novel, set during the Galactic Civil War. Though it is a tie-in with the video game, the word on the net is that this is a damn fine read.
Alphabet Squadron by Alexander Freed = Fighter squadron action set just after Return of the Jedi.
Last Shot by Daniel Jose Older = Set a few years after the destruction of the second Death Star, with flashbacks 10, 15, and 20 years prior, this story follows Han Solo and Lando Calrissian teaming up again.
Phasma by Delilah S. Dawson = Explores the origin of Captain Phasma of the First Order.
Aftermath, Life Debt, and Empire's End, a trilogy of novels by Chuck Wendig = Aftermath explores the time period between Return of the Jedi and The Force Awakens.
This trilogy features Wedge Antilles, an X-wing fighter pilot from the original Star Wars film trilogy and Imperial Admiral Rae Sloane, introduced as a captain in John Jackson Miller's novel A New Dawn. Also introduced are ex-Rebel pilot Norra Wexley, her teenage son Temmin "Snap" Wexley (Snap is a member of Poe Dameron's Black Squadron in The Force Awakens), and new characters such as Snap's rebuilt B1 battle droid, Mister Bones; the Zabrak bounty hunter Jas Emari; and the Imperial turncoat Sinjir Rath Velus.
Bloodline by Claudia Gray = This is set years after the events of Return of the Jedi and several years before The Force Awakens. This book follows Leia Organa as she navigates troubles brewing in the Galactic Senate, discovers The First Order, and begins to build the Resistance. Snap Wexley, from the Aftermath trilogy and The Force Awakens appears along with some long time Star Wars characters like Admiral Ackbar and Nien Nunb.
The Force Awakens by Alan Dean Foster = The novelization of the movie. ADF does what he does best, novelizing a movie and giving the reader much more than was in the film. This is an excellent novelization with lots of extra content.
The Last Jedi by Jason Fry = Another exceptional novelization of the movie. Contains new and longer scenes, extra content.
Galaxy's Edge: Black Spire by Delilah S. Dawson = After devastating losses at the hands of the First Order, General Leia Organa has dispatched her agents across the galaxy in search of allies, sanctuary, and firepower―and her top spy, Vi Moradi, may have just found all three, on a secluded world at the galaxy’s edge. Tie-in with Disney's Star Wars Theme attraction.
Resistance Reborn by Rebecca Roanhorse = This upcoming novel will follow the exploits of General Leia Organa, Poe Dameron, Rey, and Finn as they try to rebuild the Resistance following their devastating escape from D'Qar, the defeat to the First Order at the Battle of Crait, and the death of Luke Skywalker, all seen in The Last Jedi.
ANTHOLOGIES
Canto Bight = Short stories by different authors that all feature the resort seen in The Last Jedi.
From a Certain Point of View = Short stories by different authors that are set all through the Star Wars saga.
